this was actually a part of our advent calendar, for the last week before Christmas, jordan and i took turns writing down secret dates for one another. (here is another date from our advent calendar) jordan chose one that included making foil-pack dinners over the fire. jordan made them, but i think all he did was put in lots of veggies and some salsa and wrapped them up in foil and we placed them in the fire until they were nice and toasty. it was very good.

sorry, for not posting as much recently as i was in the beginning of the month. we need to travel somewhere else so that i have more to share other than my lunch. but, i think these things are fun too. so, i have resolved to share the little things with you as well.

this was so easy and simple, i'm a little mad at myself that i haven't made it sooner. well, maybe it's because we just got a cast iron skillet for christmas and what way to break it in than to make a big cookie? there is absolutely no better way. all you have to do is get some cookie dough and smash it down, no need to cover every part, just most and it will spread out. i made mine relatively thin to feel a tiny bit better for eating it for breakfast (yes, breakfast). i baked mine around 15 minutes and it was perfect. then top it with ice cream, grab some spoons and share. voila.
this also is probably the reason jordan and i got a juicer, and are planning on going on a juice fast next week. so i will have to share about that, it will be adventure for sure. i also signed up for another half-marathon! which reminds me that i haven't shared about the one we ran this fall.. i'll find those photos and post them soon. so, this might be the last time you will see something like this on here for a while.
fall is the time when i look for every opportunity i can to make soup, if it was solely up to me i could have it every day and every season (i'm the person that eats hot soup on a summer day), fall is the time when i can get away with making it a couple of times a week. it's so easy. cut up some veggies and throw them in a pot and see what happens. i love when i don't need a recipe to make something, but can just cook based on what i want at that moment.
my first experience with spaghetti squash was in college, we lived in walking distance to the local farmer's market. my housemate, brittany was always making home dinners at the house while i ate peas out of tupperware. one night we made spaghetti squash and cutting it in half with our dull knives was near impossible. we through them in the oven whole with a few holes poked and they came out soft and delicious.
to cook your spaghetti squash...
poke a couple holes all the way through and place in oven at about 350 degrees for an hour or hour and a half depending on how big they are. (i cooked the small one in the photo for an hour and the larger a half hour more)
while your spaghetti squash is cooking...
make your favorite sauce, and if you would like make some noodles, i love the combo of angel hair pasta and spaghetti squash. try it! (if you do this you won't need as much squash)
when your squash is finished cooking in the oven...
cut it in half and when it has cooled off a little, get a fork and scrape the insides to set free the "spaghetti"
then...
serve on a plate with the noodles and your sauce, a little cheese and some bread!
and eat! this is such a good and healthy meal for this time of year, and spaghetti squash is everywhere! trust me... you will love it. let me know if you have any other recipes for spaghetti squash.
this frozen yogurt was so easy to make. i have to share because it was so delicious.
here is what you'll need: 24 oz. greek yogurt, sugar, vanilla, oreo cookies
mix 1/3 sugar and a little bit of vanilla and yogurt together
(i added the sugar and vanilla to the yogurt container, super easy)
pour in ice cream maker, and follow those instructions
add chopped cookies (about 8-10) to yogurt just before it begins to freeze
about 10-15 minutes in, it will take less time than ice cream would
the best end of summer soup...
this was from one of our first meals in the new apartment, i am obviously behind on posting all of the pictures i have taken (this was over a month ago). we had this potato and onion tart and it was delicious. the sweet caramelized onions and gruyere, yum. one of my favorite things about jordan is that he loves to cook as much as i do, it makes the kitchen a lot more fun. as you can see he is the expert chopper.
