It's our second week in a row of not having meals delivered, and i'll be honest, I am feeling a little lost. It also could be that Jordan has been working nights, and well days too, when there's a baby to be delivered. So, really 24/7.
Before you feel sorry for us, and yes, it's been tough (and maybe we're feeling a little sorry for our Dr. Ryan), our weekend is just beginning. While this has been hard, it feels easy compared to this summer. And this is just one of those odd and difficult rotations, and we will have some normalcy soon. I'm really looking forward to the month of September, it's going to be a good one.
I'm so glad that Jordan doesn't have to go into work again tonight, and am looking forward to making another family meal soon. A few weeks ago, we made this mushroom and green been pasta. And while mushrooms are on my dislike list, I really enjoyed the way they were prepared.
Any meal that involves mini onion rings is ok in my book
Here's the recipe for this meal, I'd definitely recommend trying it out, or at least some version of it. It would be really easy to swap out the veggies. This recipe is really simple and easy to follow along.We're picking up new things each meal. We would never have thought to make little onion rings, but they added a wonderful crunch, and were a nice snack as well as we finished up the pasta. :) not too difficult at all, either.
