jordan and i typically don't go overboard for valentine's day. but, this year it was a different case. as i mentioned in this post, february was just pretty crazy, with starting a new job that was a little more difficult than i thought. it was hard for me to share how hard it was, because i wanted to be excited, but after sharing with jordan just how tough it was, i think he knew i would enjoy something a little special for valentine's day.
happy march! i am so glad
that february is finally over, but i secretly love the last bit of winter. i
love seeing how many more times i can wear my favorite sweaters and get away
wearing my leggings instead of real pants. and still feel okay about coming
home, sitting on the couch and eating ice cream and watching hgtv. and that
occasional run in the brisk cold when it finally gets in the upper 30's. so
here's to enjoying the last days of winter and i've even got a mix for you, to help you enjoy the
season of stopping, of resting and reflecting.
i wanted to share some thoughts on juicing. i think i mentioned it before, jordan i got a juicer for Christmas. excited to put it to use we went on a 3 day juice fast. and i have an overload of information to share. watch this documentary and i bet you will be joining the juicing train too.
hopefully soon i will have recipes to share, there are some on our window up there, but i didn't keep track well enough to really give you a solid recipe with good reviews. i do have some advice to share though. we started this in true kaytea fashion, on a complete whim, we watched a documentary, got a juicer and immediately juiced all the fruits and veggies on hand. i did do some research before going to the grocery store, but mostly just picked up things that i liked, i avoided the tomatos and beets, and stocked up on lots of citrus, apples, spinach and kale. i think that's my number one suggestion... is to start juicing things you already like. it will make it a lot more enjoyable.
even though i looked up recipes, i didn't follow them, so my second is, that maybe you should? although mostly enjoyed everything i made, i got a little too excited to juice all kinds of things that i would just put everything through the juicer. even if you don't have a juicer, maybe stick to 3 ingredients and if it tastes bad, add an apple (i did this many times) you can see above that i did write down what i put into the juice, this was helpful in figuring out what i liked together like oranges and blackberries, yum. and add a giant handful of spinach to anything and you're golden.

lastly, if you want a pretty looking juice, stick to the same color family, so you don't end up with that ugly brown guy there in the middle (even though it was pretty good!) this didn't make sense to me at first because i've trained myself to eat different colored fruits and veggies, but it really helps to make something taste better when it looks pretty. like that dark green or pink. i hope this is helpful, i definitely recommend juicing. i felt so clean afterward. although, i'm still not sure if it gave me energy (though i started training for a halfmarathon at the same time, another bit of advice: that's a bad idea) i want to do this again soon and share pairing ideas! like how great cantaloupe and carrot go together. in the mean time we've been making fresh orange juice, which is as good as it gets.
i am staying in indy tonight. tonight i am laughing at this picture, at my husband in his cardigan and field jacket, reading the newspaper. tonight, i cannot wait to grow old with him. tonight i think about what it will be like, and i can really just imagine us arguing about more pointless things. (debating is our favorite activity) i miss you tonight, jordan.
sorry for the radio silence over here. i'll explain. for starters, it's february. i love january, for it's newness, it's exciting. and i don't know why i always give into this, but every single year i think that it means spring is coming soon. then february comes and the groundhog tells me it still has a while yet. and i just want those peaches again, forget spring, i want summer!
secondly, i got a new job. i am now teaching art at an elementary school in indianapolis (it's a good eighty minutes away from here) it's really tough, i wish i had better things to say about it, but i'm ready for summer already. teaching, especially in a city is no easy task. since it's such a long commute i've been staying with family through the week. (thanks!) jordan and i will be moving up in may! so hopefully by then i will have my bearings and you will see some updates on here. (and it will be spring! oh, i can't wait!) i'll try to squeeze in a few here & there too!
just now getting around to sharing these photos, i did share some in a couple posts, i just noticed them sitting amongst the photos, and thought that this snowy indiana day was perfect. there wasn't that much snow, but it was surprising, did you hear about the elephants on the highway? crazy!
photo cred: chelsey collins, more snowy photos: snow, a few more, snowball fight, snowy trees
oh, and happy february! here's to hoping spring comes soon! we have a big weekend with young life, hopefully i will remember to take and share photos!
